Welcome to the Orange Beach Fishing Cooperative's Game Fish Seasoning webpage. Our seasoning is as distinctive in today's foods as it was prepared by french cooks for hundreds of years. This game fish seasoning is a special blend of herbs, spices and natural flavors that enhance the flavor of fish. You may also try it on steamed vegetables, gravies, stews, casseroles, dressing, vegetable juice, cooked eggs, chops, roasts, chicken, and wild game birds. Where similar seasonings tend to mask the flavor of fish with heat, ours is just the opposite. We do not use any cayenne or red peppers in our game fish blend.

While over fishing of many species is still occurring with Red Snapper, Gag Grouper, Triggerfish and Greater Amberjack, we thought it was important to develop our own brand of game fish seasoning that promoted only harvesting fish that were not currently being over fished. You will probably notice that the fish we chose to be on our label, are what we call sustainable fish. Wahoo, Speckled Trout, Redfish, Mahi Mahi and Cobia are just a few of the fish that have healthy populations and are not undergoing overfishing. There are also other species you can harvest that are sustainable like Vermilion Snapper, Red Porgy, Scamp Grouper, Red Grouper, King Mackerel, Spanish Mackerel, Lane Snapper and many more.
For over three years now, the Orange Beach Fishing Charter Cooperative's members have been testing different spices and looking for a seasoning blend that is unique. We want to be able to give our customers something unique to Orange Beach. It was important to us to come up with a fish seasoning that enhanced the flavor of the fish and not just covered up the flavor.
The Many Ways was Sustainable Game Fishing Seasoning Tested
Captain Troy Frady of Distraction Charters in Orange Beach, headed up the tireless effort to come up with the best blend of seasoning and spices. Little did he know it, but the flavor he came up with was tried and tested for the past three years by thousands of customers. We fried fish, grilled fish, sauteed fish, broiled fish, steamed fish and even ate it ceviche style. What these Orange Beach Charter fishing guides came up with, was one of the best blend of seasonings and spices you can ever use on fish caught on the Alabama Gulf Coast and around the world. We added this seasoning to corn meal mix and used as a batter on fried fish.
We tried the Orange Beach Fishing Charter Cooperative Seasoning Recipes on fish we caught off the Alabama Gulf Coast like Amberjack, Cobia, Mahi-Mahi, Swordfish, Red Snapper, Wahoo, Red Porgy, Vermilion Snapper, Sheepshead, Speckled Trout, Redfish, Bull Redfish, Pompano, Stripers, Bluefish, King Mackerel Recipe, Spanish Mackerel, Lane Snapper, Yellowfin Tuna, Rainbow Runner, Eel, Scamp, Grouper, Gag Grouper, Warsaw Grouper, Mangrove Snapper, Black Drum, Mullet, White Trout, Barracuda and Grass Porgy.
We have even tried it on Gulf Shrimp caught in Alabama waters. We tried other game fish like Halibut, Cod, Scrod, Salmon, Steelhead Trout, Bluefish, Stripers and shellfish like Oysters, Crab, Mussels, Lobster and more. Each of these also tasted wonderful.
We are not saying our fishing seasoning and spice is the best, we are just saying that it is best for our customers.
